Tarte a la Bouillie

"Burnt Cream" Pie, a real Cajun treat made just as my Maw-Maw enjoyed. It's a semi sweet vanilla custard tart setup in a sugar cookie crust. Purely homemade and not truly intended for commercial sales. Tarte a la Bouillie is typically found in many homes throughout the bayou region during the holiday season. Tradition says this coincides with Oyster Season in Southeast Louisiana. So after the tarts were formed the remaining dough was used to make sugar cookies for the fisherman. They hung in the wheelhouse of the boat as a snack and small reminder of home. They are called Pillowcase Cookies.
